Mexican Style Meatloaf
1-1/2 to 2 lb. your favorite ground meat (beef, pork, turkey, etc.)
1 c. oatmeal, cracker crumbs or breadcrumbs
1/2 to 3/4 c. mild picante sauce
1 egg
Salt & pepper to taste

If needs moistening, add some tomato juice or try V-8. Mix ingredients together, shape into loaf and put in pan. Bake at 350 degrees for 1 hour, or until the loaf is firm. Serve with potatoes or rice and corn or cornbread.

Easy Taco Casserole
1 pound ground beef
1 cup salsa
1/2 cup mayonnaise or salad dressing
2 teaspoons chili powder
2 cups crushed tortilla chips
1 cup ( 4 ounces ) shredded Colby cheese
1 cup ( 4 ounces ) Monterey Jack cheese
1 medium tomato, chopped
2 cups shredded lettuce

In a skillet, brown ground beef; drain. Add salsa, mayonnaise and chili powder; mix well. In an ungreased 2-qt. baking dish, layer half the meat mixture, chips and cheeses. Repeat layers. Bake, uncovered, at 350 degrees for 20-25 minutes or until heated through. Just before serving, top with tomato and lettuce.


This is an easy casserole with a mild spicy Soutwestern flair.

Cheese 'N' Chicken Enchiladas
1 medium onion, chopped
2 tablespoons butter or margarine
1-1/2 cups shredded cooked chicken or turkey
1-1/2 cups Taco Bell Home Originals Medium Picante Sauce, divided
1 pkg. ( 3-oz. ) Philadelphia Cream Cheese, cubed
1 teaspoon ground cumin
1 pkg. ( 8-oz. ) Kraft Shredded Cheddar Cheese, divided
8 Taco Bell Home Originals Flour Tortillas

Cook and stir onion and butter in medium saucepan on medium heat 2 minutes. Add chicken, 1/4 cup of the picante sauce, cream cheese and cumin; heat thoroughly, stirring occasionally. Stir in 1 cup of the shredded cheese. Spoon about 1/3 cup of the chicken mixture onto each tortilla; roll up. Place seam-side down in a 12x8-inch baking pan. Top with remaining picante sauce and shredded cheese. Bake at 350 degrees for 15 minutes or until throughly heated.


These chicken enchiladas with cream cheese are delicious!

Mexican Sunset Bread (Bread Machine)
2/3 cup water ( 70 to 80 degrees )
1/2 cup sour cream
3 tablespoons chunky salsa
2 tablespoons plus 1-1/2 teaspoons taco seasoning
4-1/2 teaspoons sugar
1-1/2 teaspoons dried parsley flakes
1 teaspoon salt
3-1/3 cups bread flour
1-1/2 teaspoons active dry yeast

In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust and color and loaf size if available. Bake according to bread machine directions ( check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed ). Makes 1 loaf ( about 2 pounds ).

This chewy crusted bread is good with chili and cream soups!
