Moms
are often looking for ways to add vegetables to
our kids' diets.
If your kids are used to eating food that doesn't
contain enough vegetables, start out slowly by
adding a little bit of vegetables at a time. If a
child is accustomed to eating no vegetables, it
will take time to develop good eating habits. A
good way of adding vegetables to their diet is to
chop them up finely and add them to other
recipes. Your children will not realize they are
eating more vegetables, and you will feel much
better about their diets. Here are some good
examples:
- Add some
fresh chopped spinach in your ricotta or
cottage cheese mixture when making
lasagna.
- Chop up
some extra tomatoes and onions when
making chili.
- Add extra
tomatoes, onions, and celery to your
meatloaf. Instead of using ketchup to top
off your meatloaf, try pureeing fresh or
low-salt canned tomatoes mixed with some
seasonings.
- When is the
last time you made a salad? This is
actually one of the few ways that my own
kids like to eat vegetables. They love
eating salads with grated cheese,
croutons, bacon bits, and ranch dressing.
Salads are a great way to add several
vegetables at once. Try cucumbers,
lettuce, tomatoes, finely chopped
mushrooms, celery, thinly sliced carrots,
and finely chopped broccoli.
