Holiday Recipes #1

Holiday Can Cakes
3 beaten eggs
1/2 cup oil
1/2 cup milk
2-1/2 cups flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon soda
1 teaspoon cinnamon
1/2 teaspoon salt
2 cups shredded carrot
1-1/3 cups flaked coconut
1/2 cup snipped marashino cherries
1/2 cup raisins
1/2 cup chopped nuts ( your choice )

Combine eggs, oil and milk. Mix flour, sugar, baking powder, soda, cinnamon and salt; add egg mixture. Mix until just moistened. Stir in remaining ingredients. Spoon into 4 well greased and floured 1 pound cans. Bake at 350 degrees for 45 to 50 minutes. Let set about 10 minutes before removing from cans.

These cakes made great gifts! They are different than the usual fruitcake. Carrots add another flavor and texture!

Holiday Recipes #2

Soup To Nuts Salad
3 ( 3-oz. ) pkgs. cream cheese or 1 ( 8-oz. )
1 can tomato soup, undiluted
2 small pkgs. lemon jello
2/3 cup hot water
2/3 cup cold water
1-1/2 cups chopped celery
1 small onion, grated
1 small green pepper, chopped fine
1 cup nuts, chopped
1 cup Miracle Whip

Heat undiluted soup. Add cream cheese; beat till smooth. In another bowl, mix jello and hot water, then cold water. When both mixtures cool, add jello to soup. Add all other ingredients, except Miracle Whip. Mix. Add Miracle Whip and mix well. Chill.

This made a pretty salad during the holidays. It tastes great!

Holiday Recipes #3

The Best Holiday Turkey Stuffing
8 Cups cubed French Bread
1 Cup Butter
1 Red Pepper diced fine
1 Onion diced fine
3 Stocks Celery diced fine
4 Large slices Black Forest Ham
1 Cup diced Mushrooms
1 Chicken oxo cube
1 tsp poultry seasoning
2 cloves minced Garlic
salt&pepper to taste


Saute'in butter. Onion, red pepper, celery, ham, mushrooms seasoning, and oxo cube until onion is transparent. Toss over bread mixing well.

This is a family recipe we have use for years. We can't have Christmas or Thanksgiving without it!
